Salad Ingredients:
- 2 cups cooked (boneless, skinless) chicken cut into bite size pieces (or rotisserie)
- 8 oz romaine lettuce (or spring greens or combined)
- 2 tomatoes, chopped
- 1 cup toasted pecan halves (optional)
- 1/2 cup dried cranberries
- ¼ red onion, sliced into rings
- Feta cheese
- 1 cup dried apple slices
Dressing Ingredients:
- 2/3 cup olive oil
- 2 Tablespoons golden balsamic vinegar (also called white balsamic vinegar)
- 2 Tablespoons apple cider vinegar
- 2-3 garlic cloves, minced
- 3 teaspoons Dijon mustard
- 3 Tablespoons honey
Directions:
- Mix together all of the salad ingredients in a medium bowl
- Whisk together the dressing ingredients.
- Drizzle dressing over the top of the salad
