Apple Pork Chops

Ingredients:
  • 4-5 Center cup pork chops
  • 2 ½ cups apple compote (or other pie filling recipe) made from reconstituted apples (if using canned apple pie filling, add ½ cup brown sugar)
  • 1 box stovetop stuffing mix (cornbread or regular)


Directions:
  1. Brown chops and season with salt and pepper.
  2. Place chops in baking dish.
  3. Spoon pie filling over chops (reserving a small amount of pie filling mixture to top each prepared pork chop.)
  4. Prepare stuffing as directed on box.
  5. Place approximately 1/3 cup stuffing on top of each chop.
  6. Bake uncovered @ 375 degrees for about 1 hour.
