Apple Muffins

1 Egg
1/2 C Milk
1/4 C Oil
1 tsp. Vanilla
1 C Grated Apple (or dehydrated apples that have been rehydrated and drained)
1-1/2 C Flour
1/3 C Sugar
1/3 C Brown Sugar
1-1/2 tsp. Baking Powder
1/2 tsp. Salt
1/2 tsp. Cinnamon
Topping:
1/2 C Flour
1/2 C Sugar
4 Tbsp. Butter, room temperature

Heat oven to 350 degrees. Grease or use paper liners in a 12-cup muffin tin. Combine the egg, milk, oil, vanilla, and apple. In a separate bowl mix together the flour, both sugars, baking powder, salt and cinnamon. Add the egg mixture and stir just until the dry ingredients are moistened. Pour into the greased or paper-lined muffin cups. Mix the topping ingredients together until crumbly. Sprinkle evenly over the muffins. Bake for 20-22 minutes or just until a toothpick inserted into the center comes out clean. Let cool 5 mins in the pan, then remove from the pan and finish cooling on a wire rack.
